Sneaks and 30 Days: Days 21 & 22

~Happy Friday all,

~Well I went to the doctors yesterday and I have a stupid viral infection, so I'm pretty much staying indoors for a few days - but that's not a bad thing as I've managed to get some scrapping done!!! I can't share the full layouts yet - but here are some sneak peeks:

I've had such a fab time and met some fabulous people - Tiff takes on alot of first timers too so if you've never been on a DT this is your time to try.

~Right onto 30 day, today we have to share a recipe..... so the good news is I'm going to share the recipe for Fudge Nut Muffins, as was requested by several different people!!!! So here it is:

Ingredients:
250g self raising flour
1 tsp baking powder (i always add a teaspoon to my muffins and cupcakes)
85g caster sugar
6 tbsp crunchy peanut butter
1 large egg
4 tbsp melted butter
175 ml milk
150g vanilla fudge (cut into small pieces)
3tbsp roughly chopped nuts

Method:
Pre-heat oven to 200c
Line a 12 cup muffin pans with muffin paper cases.
Mix flour with baking powder, stir in the caster sugar. Add the peanut butter and stir until the mix resembles breadcrumbs.
Place the egg, butter and milk in a seperate bowl and mix until blended, then stir into dry ingredients until just mixed. Lightly stir in the fudge pieces. Seperate the mixture between the cases.
Sprinkle the chopped nuts on top and bake for 20-25 minutes, or until well risen or firm to touch. Remove the muffins and cool for 2 minutes, remove from tin and place on wire rack to cool completely!!!!

~These muffins are totally gorgeous, and are one of the favourite of my local crop - they totally love these!!!!
